White Chicken Chili

~1.5# chicken breast

1 jar low-sodium salsa

2 cans low-sodium great northern beans

8oz monetary jack cheese


1 can low-sodium fire roasted tomatoes

1 can low-sodium black beans, drained and rinsed


1. Cook chicken breast separately. Dice or shred and set aside.

2. In a crockpot, add salsa, great northern beans, as well as optional fire roasted tomatoes and/or drained and rinsed black beans if desired. Note: the great northern beans are not drained, put the entire contents of the can into the crockpot.

3. Add the diced/shredded chicken into the crockpot. Stir everything together and set on either low for about 4 hours or high for about 2 hours.

4. Once soup is completely warmed through, add the monetary jack cheese. Stir well to incorporate and melt the cheese. Serve immediately.
