Sweet and Sour Meatloaf & Cheesy Cauliflower Mash

Sweet and Sour Meatloaf:

Yield: 4 servings

Ingredients:

1lb lean ground beef

3/4 cup bread crumbs

1 medium onion

1/2 can tomato paste (3oz)

1 egg

Pinch of salt and pepper


Sauce:

1/2 can tomato paste (3oz)

2 tbsp vinegar

3/4 cup water

2 tbsp mustard

1/4 cup Splenda Brown Sugar


Directions:

1. Preheat oven to 350. Mix together first 6 ingredients.

2. Place mixture into a baking dish (8X8 or similar works great) sprayed with a little nonstick spray. Spread out the mixture to the edges of the pan.

3. Mix together all ingredients for the sauce. Pour over the meat mixture in the pan, covering completely.

4. Bake for 90 minutes. Check every once in a while and stir towards the edges to prevent burning. The sauce will be watery at first, but will thicken as its cooked.

5. Enjoy! Store in the fridge for up to 1 week, or freeze individual portions.

Cheesy Cauliflower Mash:

Yield: 4 servings

Ingredients:

1 head of cauliflower

1 tbsp butter

4 cloves garlic

1/3 cup buttermilk

1/3 cup shredded cheddar cheese

pinch of salt and pepper


Directions:

1. Bring a pot of water to a boil. Add in roughly chopped cauliflower and boil for 15-20 minutes until soft.

2. Put drained cauliflower and the rest of the ingredients into a food processor or blender. You can also keep drained cauliflower in the pot and use in a immersion blender.

3. Blend for a minute or two until well combined. Serve and enjoy!
