Italian Protein Pasta

A quick and easy Italian dinner option that allows for a large serving and an extra protein punch! A serving size is 1.5 cups.


Will your kids not warm up to the idea of spinach? As a family challenge, have your kiddo's choose what they would like to put into the pasta! Swap out the spinach in this recipe for any veggie. Involving kids in meal prep may help peak their interest in a well-rounded and veggie filled meal!


Ingredients:

1 12. oz box of Penne Pasta (I used True Goodness protein pasta for this recipe)

4 diced Boneless, Skinless Chicken Breasts

3 cups of Spinach (or veggie of choice)

8 diced Roma Tomatoes

1/2 cup of Parmesan Cheese

1 Tbsp Parsley

2 tsp Onion Powder

2 tsp Garlic

1 tsp Black Pepper

1 tsp Oregano

Olive Oil


Directions:

Cook pasta as directed. Dice chicken and coat in olive oil, generously season with onion powder, garlic, parsley, black pepper, and oregano. Cook chicken thoroughly.

Add cooked pasta and chicken to large pan w/ washed spinach and diced Roma tomatoes. Cook down until spinach and tomatoes are wilted. Stir in parmesan cheese. Enjoy!
