This creamy dill pasta salad is packed with nutrients from a variety of fresh produce items without the additional fat and sodium contained in traditional pasta salad recipes.
2 Boxes True Goodness Protein Pasta
1 Block Sharp Cheddar Cheese, Cubed
3 Cups Cherry Tomatoes
4 Cups Cucumber, Diced
2 Cups Green Pepper, Diced
1 Cup Red Onion, Diced
2 Cups Miracle Whip
1/2 Cup Vinegar
1/4 Cup Mustard
1/4 cup Sugar
1 Tbsp Dill Weed
2 Tbsp Pepper
Cook pasta, as directed on box. Set cooked pasta aside to cool. Prepare remaining salad ingredients: sharp cheddar cheese, cherry tomatoes, cucumber, green pepper, and red onion. Combine cooled pasta, vegetables, and cheese in a large bowl. Set aside.
Prepare dressing in separate bowl. Combine all ingredients and whisk together until smooth and well blended. Pour dressing over pasta salad and enjoy! Store in refrigerator. This recipe makes 24, 1 cup servings.
