Oatmeal Breakfast Muffins

Yield: 12 muffins


2 bananas

2 eggs

1 cup Greek yogurt (vanilla or plain)

2 tbsp honey

1 1/2 tsp baking powder

1/2 tsp baking soda

Pinch of salt

3 cups old fashioned oats

Topping(s) of choice (chocolate chips, nuts, fruit)


1. Preheat oven to 350 degrees.

2. Mash 2 bananas and 2 eggs together. Add Greek yogurt, honey, baking powder, baking soda, and pinch of salt. Fold in old fashioned oats.

3. Spray a muffin tin with non-stick spray, or use cupcake liners. Fill each with batter and top with topping(s) of choice. Bake for 20-25 minutes.

4. Once cooled, store in a freezer safe bag. When ready to eat, just take out and pop in the microwave for about 1-1:30.

Nutrition Facts per 1 muffin: 130 calories, 6g protein, 23g carb, 2g fat, 1g saturated fat, 82mg sodium, and 3g fiber.
