Tangy Chicken BBQ

Mix it up with this asian inspired barbecue recipe! Perfect for a weeknight meal, meal prep, crock pot, stove top, and enjoying every single bite!


Ingredients:

4 cups diced/shredded chicken breast

2 cups ketchup

1/4 cup maple syrup

1/4 cup Worcestershire sauce

1/4 cup vinegar

1/4 cup brown sugar

4 cloves garlic, minced

Dash of ginger seasoning, or grated ginger to taste

Black pepper to taste

Dash of orange zest

Juice of 1/2 to 1 orange


Directions:

Combine all ingredients except the chicken in a pot or large skillet. Let simmer for about 20 minutes on low heat. As it simmers add the cooked chicken after 10 minutes or so. (You can't mess this up). Let it continue to simmer and make sure all the chicken is warmed through. That's it! Serve on a whole grain bun, in a bowl with avocado & tortilla chips, on top of rice or quinoa, the sky is the limit!


You can also make the sauce, add cooked chicken, and let it heat up low and slow in the crockpot for4 hours. The goal is heat it up since the chicken is already cooked!


For meal prep: divide into individual Tupperware containers for warming up later. Store in the fridge for 1 week, or freezer for 6 months! When ready, warm it up and add desired toppings or extras!
